You may know Krystal Keith as the singer of the sweet father/daughter wedding dance song, “Daddy Dance With Me,” which she wrote for her own wedding as a surprise for dad Toby Keith. Or maybe you know her from her official debut single, “Get Your Redneck On.” [Get it here!] But did you know she’s also super talented in the kitchen? Krystal’s been creating delicious meals from family recipes for years and featuring them in her blog, The Barnyard Bistro. But now she’s sharing some of them exclusively with Great American Country! “Tiny things are just cuter,” says Krystal. “I don’t care what it is, you put it in miniature form and I’m gonna love it even more than I already did. I recently came across the perfect “miniature” sandwich bread and bought it knowing that I would do big things with it.
“One variety I snagged was Jewish Rye and what sandwich is better on rye bread than a Reuben?” she continues. “It’s my husband’s favorite sandwich at any true delicatessen (and trust me he is absolutely a connoisseur). I wanted to give it a try with my own fat-free thousand island recipe and put it to his test. It passed with flying colors. In fact, he loved it so much it has been his lunch for three days straight. And the fact that they were slider-size made him happy that he got to eat four!
Fat-Free “Thousand Island” Dressing Ingredients:
1 – 5.3oz serving cup Chobani plain, non-fat Greek yogurt (or other brand)
1/2 cup ketchup
1 tsp dijon mustard
1/2 cup sweet pickle relish
pinch of salt and pepper
Mix ingredients well. You can use immediately but allowing the mixture to sit in the fridge for an hour or more will help marry the flavors and give the sauce a richer flavor.
8 slices Pepperidge Farms Party Jewish Rye
4 oz shaved deli pastrami
4 slices of Swiss cheese
4 Tbsp sauerkraut
4 Tbsp Fat-Free Thousand Island
Begin by topping one piece of the rye bread with 1 ounce of pastrami, followed by 1 tablespoon of sauerkraut, 1 tablespoon of the fat-free Thousand Island. Fold one slice of the Swiss cheese in half and then half again, creating a square. Place the Swiss cheese on top and then place the second piece of rye bread. Repeat this process to create all four sandwiches. You can either pop the four sandwiches into the microwave for 60-90 seconds or place them in the oven for a few minutes on 325 degrees, just until the cheese melts. Enjoy!
